Honey glazed lamb mini roast + potatos

HONEY GLAZED LAMB MINI ROAST+ POTATOS

Ingredients:

  • 1 lamb mini roast (about 1 pound)
  • 2 garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons honey

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a small bowl, mix together the garlic, rosemary, thyme, salt, and black pepper.

  3. Rub the olive oil all over the lamb mini roast, and then rub the herb mixture over the lamb, making sure it is evenly coated.

  4. Drizzle the honey over the lamb mini roast.

  5. Place the lamb mini roast in a roasting pan and roast in the oven for about 25-30 minutes, or until the internal temperature of the lamb reaches 145°F (63°C) for medium-rare.

  6. Remove the lamb from the oven and allow it to rest for 5-10 minutes before slicing and serving.

  7. Serve your delicious honey-glazed lamb mini roast with your favorite sides, such as roasted vegetables or mashed potatoes.

Note: As mentioned in the previous recipe, cooking times may vary depending on the size of the lamb mini roast and your oven, so it's always a good idea to use a meat thermometer to ensure that the lamb is cooked to your desired level of doneness.

  • 4-5 medium-sized potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. After seasoning your roast as desired, place it in the center of a large roasting pan.

  3. In a medium bowl, mix together the olive oil, rosemary, thyme, garlic powder, salt, and black pepper.

  4. Add the potato cubes to the bowl and toss them with the seasoning mixture until they are evenly coated.

  5. Arrange the potato cubes around the roast in the roasting pan, making sure they are not stacked on top of each other.

  6. Place the roasting pan in the oven and roast for about 45-50 minutes, or until the potatoes are crispy and golden brown.

  7. Remove the roasting pan from the oven and let the roast rest for a few minutes before slicing.

  8. Serve your delicious oven-roasted potatoes alongside the roast.
