HONEY GLAZED LAMB MINI ROAST+ POTATOS
Ingredients:
- 1 lamb mini roast (about 1 pound)
- 2 garlic cloves, minced
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons honey
Instructions:

Preheat your oven to 375°F (190°C).

In a small bowl, mix together the garlic, rosemary, thyme, salt, and black pepper.

Rub the olive oil all over the lamb mini roast, and then rub the herb mixture over the lamb, making sure it is evenly coated.

Drizzle the honey over the lamb mini roast.

Place the lamb mini roast in a roasting pan and roast in the oven for about 25-30 minutes, or until the internal temperature of the lamb reaches 145°F (63°C) for medium-rare.

Remove the lamb from the oven and allow it to rest for 5-10 minutes before slicing and serving.
