Herb and Mustard Crusted Rack of Lamb

A delicious recipe for Herb and Mustard Crusted Rack of Lamb:
Ingredients:
- 2 racks of lamb (8 chops each)
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper
- 2 tablespoons olive oil
Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the Dijon mustard, whole grain mustard, garlic, thyme, rosemary, parsley, salt, and pepper.
- Rub the mustard mixture all over the racks of lamb.
- Heat a large oven-safe skillet over medium-high heat and add the olive oil.
- Add the lamb racks to the skillet, fat side down, and sear for 2-3 minutes until browned.
- Flip the racks over and transfer the skillet to the preheated oven.
- Roast for 12-15 minutes for medium-rare, or until the internal temperature reaches 130-135°F (55-57°C).
- Remove the skillet from the oven and let the lamb rest for 5 minutes before slicing and serving.
Optional: Serve with roasted vegetables and a side of mashed potatoes. Enjoy!
